True Amish canning!!

Let me start off by saying Amish do not pressure can anything, ever. Makeitmake on u tube has a whole series on water bathing everything. Millions of people around the world still waterbath everything to this day, this includes the Amish. The people who condemn waterbathing veggies and meat did not grow up on water bathed canned goods. Their moms didn’t do it, their grandmas didn’t do it. They know nothing about it. In fact the only thing they know is a governing authority told them it’s not safe. Yes it is! Talk to people who have been doing this for generations. Waterbathing everything ( now called rebel canning) really is the best way to can. This book gives a real look into the art! Books like this are hard to find! Wish it had more recipes. This is real Amish canning!

I just received my book today, and I'm excited to start using it! I went through the reviews and read about those who were concerned with the boiling-water canning process being used in the "Amish Canning and Preserving" book. These concerns prompted me to take a look at my trusted "Ball Book of Canning and Preserving" to compare the canning process used in those recipes. What I found is that "Ball" uses the boiling-water canning process for their sauces, pickles, relishes, jams, jellies, etc., too. I did notice, though, that the recipes involving meat in the "Ball" book used the pressure-cooker canning method, and the "Amish" book instructed using the boiling-water canning method for 3 hours when canning soups with meat in them. Along with my "Ball" canning book, I really think I'll be able to trust the "Amish" book as a safe resource for canning, too! 😋

Great Canning tips and recipes

Same book was at TSC for twice the price. Book has some great old fashioned tips and recipes.

Not what I expected

I was hoping to see the "and more" but there wasn't really. The chicken and veggie soup are the only meals this book gives you to can. So disappointed and this was a book recommended. I will say the recipes seem simple enough to follow.
