Great for dry aging meat!
I ground the koi rice in a coffee/spice grinder and sprinkled all sides of steaks. The steaks dry aged on a rack in the refrigerator for 4 days. Thereafter, I rinsed them and gently rubbed the koji off. The steaks looked great- no mold, now waste to trim, and the flavor was incredible. They were as good as any steaks that I have dry aged for weeks but without the mess and waste.

Not keto friendly
Carbohydrates are way too high for low carb diet. Not keto friendly at all. Sugar also high.
