How long can you store these?

Fresh ground as you need it stays well. If you ground it all when you got it, it would loose that fresh groundness. I use 1 every 2 weeks, got 1 left. It's still fine. So nearly 3 months ago, I don't notice any difference. Keep in mind this coffee is a great every day coffee at a great price not a great coffee at a super great price.
