Can anybody tell me the thickness of the handle? I dont mean the overall length, but rather the depth if cutter was laying flat on a table.

The wood handle is 13/16” thick x 1 9/16” wide x 6 1/16 long and it’s made from Bubinga, not Rosewood.

how to determine the age of one I own

I have no idea if you can determine the exact age, but if the metal corners and bottom edge are not REALLY sharp any more, you have either used yours a lot, or it is quite a few years old! The new models have pretty "sharp" corners and blades; they could do some damage to a countertop. I use dough scrapers on a wooden cutting board...

It is very sharp and thin just right as it is. Although I sincerely believe that you can sharpen it even more if you know what you are doing.
